Watermelon Salsa
Ingredients
3 Cups Watermelon (about 2 pounds) cut in ½ inch pieces
1 1/3 Cups Jicama, peeled and cut in ½ inch pieces
2 Tbsp snipped fresh Cilantro
1 Tbsp minced Jalapeno Pepper
1 Tbsp Lime Juice
1 Cup diced Dates
1 Sliced Avocado
In a large bowl combine watermelon, jicama, cilantro, jalapeno and lime juice. Toss to coat. Use avocado as garnish. This goes well with grilled chicken or pork chops. .
NOTE: We tripled the recipe, used it as a salad and garnished each serving with a slice of avocado.
